Kuih Cara

Yesterday, I made kuih cara manis and just wanted to share it with you. It's an easy recipe. There're cheap too. The kuih turned out really nice, if I may say so myself. Saying that my mum & dad kept returning back to the kitchen for more and more :)

You need to get a mould to make this one, of course. You can also of course, use the mould to make kuih cara berlauk as well so rest assured your investment in such a mould would be worthwhile. Hehe

Right! Now, let's get down to the recipe

Ingredients:
2 cups of flour
1 cup of coconut milk
3.5 cups of milk
An egg
Some pandan juice or the paste where you can easily get it anywhere
A pinch of salt

Sugar for the filling
Oil

Procedures:
Whisk the top 5 ingredients all together. Mixture will be thick-ish. Oil the mould and heat it up. Pour the batter into each mould and sprinkle or spoon some sugar onto each one. Cover the mould. It will be ready in a few minutes, when the middle is fairly dry and you can see that the sides have browned a bit. Scoop it out gently with a spoon.

PS: Make sure you turned the fire down and keep it low as the kuih will be ready in about 2-3 mins.
